My son and I have seafood/fish for dinner at least twice a week. I texted my son at work today to ask if he wanted shrimp or salmon for dinner tonight. He responded "Both?" So he was surely pleasantly surprised when he came home to this dish!

Ingredients For creamy creole salmon and shrimp

  • SAUCE
  • 1/4 c
    butter, divided
  • 1 md
    onion, chopped
  • 3 clove
    garlic, minced
  • 2 Tbsp
    all purpose flour
  • 2 tsp
    creole or cajun seasoning (I use Tony chachere's)
  • 1 tsp
    paprika
  • 1
    roasted red pepper, finely diced (I always keep some roasted red peppers in my freezer)
  • 1 1/2 c
    whole milk or half and half
  • 1 c
    chicken broth
  • SALMON AND SHRIMP
  • 1 Tbsp
    extra virgin olive oil
  • 4
    salmon fillets, skin removed
  • 1/2 lb
    large-jumbo raw shrimp, peeled and deveined
  • 2 tsp
    creole seasoning, divided
  • lots of fresh, chopped parsley for garnish

How To Make creamy creole salmon and shrimp

    To make the sauce, melt 2/3 of the stick of butter in a large skillet over medium heat.

    Add onions and saute until softened, add garlic and saute just until fragrant.

    Sprinkle the flour, Cajun seasoning, and paprika over the onions. Whisk to combine. Cook for 1 more minute until smooth. Add more butter, if needed.

    Add in roasted red peppers and mix for a few seconds.

    Pour in milk and chicken broth, whisking until combined.
  • 6
    Bring just to a simmer and cook on low temp for around 10 minutes, or until the sauce has thickened nicely. Stir frequently.

    To make the salmon and shrimp, season salmon fillets with 1 tsp. of the Cajun seasoning.

    In a separate skillet over medium heat, add the remaining butter and 1 Tbsp. extra virgin olive oil.

    Add salmon fillets and cook for 4 minutes on each side, or until the salmon is cooked through. Set aside and keep warm.

    Season the shrimp with the remaining Cajun seasoning and add them to the skillet. Cook for 2-3 minutes on each side. Remove the pan from heat and set aside.

    Add the salmon and shrimp to the sauce.

    Serve immediately over pasta, rice or creamy mashed potatoes (mashed potatoes are what's in the photo), if desired. Garnish with plenty of fresh parsley!
